NEW 180 Gallon tank: I need ideas!

So this weekend I'm picking up a 180 gallon tank (standard 6' x 2' x 2'). I'm super excited and I want some ideas for stocking it. current stock list is here:

1x Florida gar(currently 14")
1x Ornate bichir (currently about 8")
1x Red tail payara (currently about 6-7 inches)

I'm looking for fish that can do well in my tank for at least three years. I'm mainly interested in catfish, peacock bass and friendly(human-interactive) fish. Also they have to be able to get along with my current stock so I'm not sure if a peacock bass would rapidly outgrow my payara and eat him. Species of interest are: Fire eel, cichla monoculus/ocellaris/orinocenis, Marbled catfish, giraffe catfish, silver arowana, clown knife and wolf fish(mala).

PS: i'm not into cichlids(excluding peacock bass).

I'm going to be using my 75 gallon tank as a grow out tank until they are big enough for the 180 but I plan on buying my fish as small as possible(i.e., most LFS's have the following: 1" pbass, 3-4 inch arowana, 2-3 inch clown knives, 4" gcats, 3" marbled cats and 4-6 inch fire eels.)

i'm getting one for my 75. they grow very slow so if it is in fact a true lima then it will take 3-4 years to out grow my 75. then i'll move it to the 180. if it turns out to be an elongatas then it should be set for life in the 75. but i'm really looking for something that isn't really common and gets big faster.
 
My friend had a Lima go from 3"- 14" in 8 months that's not slow lol

im skeptical. it may have been one of the larger sub-sbpecies or something. i know it took necrocanis(catfish god) 3 years to get his from 2" to 15" and i think he had a S. lima.
 
Looks good. But yeah, his was
Def a Lima and he got it at 5" n 8 months later it was a 14" beast nose to tail. Maybe his was just a freak? Idk lol. It died though :/ don't know why he just came home one day and he was floating :( all of his other
Fish were fine
