Shrimp imo. If you add a few more plants (a few) then they'll grow into a small family and it'd be nice watching them work their way around the tank doing whatever shrimps do best. Fish are alright but they won't really do much, and given that it's on your work desk, I'd imagine that you'd want to see some different stuff happening from time to time.
