New red devil. Peeling?

I have just bought myself a red devil, he is around an inch long and i believe a stunner. He is likely a midevil, not pure strain. However, i am curious what peeling is? I see people mention it alot but i dont quite understand the concept. Anybody know what it means and can explain it for me that would be great .

So at current mine is red all over with black in the centre of his head, which i presume is his brain. Or the backs of his eyes, as he has enormous eyes. I say he, he might be a she. Could mine change colour? As it was my understanding, the changed to the red, from this mottled or striped colour.
Was yours previously red/orange? Lovely looking btw, if mine ends up like that i would be pleased.

heres mine, it was yellow with a black tail when I got him, now hes generally turning more peachy coloured base but with an orangey face. These guys can go through all kinds of changes as they grow.
Mine has had black patches all over his fins at different times they only tend to last a week then dissapear.

The peeling process is more a-peeling, it looks like an interesting process to have a fish go through.
my second Q, is how fast do these guys grow? mine is current at about 1-1.5" and eating like a pig, but how does their growth relate to that of othe CA/SA species?

It all depends on food and water changes, size of tank and number of fish in said tank. Fishmans RD earlier in this thread is 6". That is one of my fry, they were born May of 2011. Another friend of mine has another one of mine and his is 7-8" already. I still have about 100 of the fry and they are all around 4". So it all depends on you.
