I want to have a South American tank, what size tank would I need for the stock I want to have,

1 chocolate cichlid
1 gold severum or Oscar
1 true parrot cichlid
1 heros notatus
5-6 geophagus trapjos

Go for larger tank. The more water volume your tank has, the more dilution of ammonia and waste. If you can't see yourself changing more than 25% of the water once a week, then you need to reduce stocking or get smaller fish. The bigger the fish, the faster you reach 20ppm in nitrates, which can happen in less than 3 days if you have too many fish.

Personally I wouldn't do less than 6 foot 210 gallon tank with a sump for adult versions of the oscar, chocolate and red head tapajos (assuming all of them tolerate each other). You might have aggressions issues between the oscar and chocolate (same body type, equal competitors).

What kind of stock would you recommend for a 125 then, the chocolate will be in their definitely as I already have him in another tank, what other fish could I have with him but not overstocking the tank to much. I am willing to do a 60-70% water Change a week

As adult fish, 1 chocolate and 4 geo red head tapajos (1 male and 3 females) would be the max I would put.

If you want the chocolate to be the centerpiece, 1 chocolate, 8-10 cories for bottom feeders and 12-15 buenos aires tetras (or similar in size like colombian tetras) as dither fish.

I agree with the others about size of tank.
In a 125, just the Geophagus and a chocolate.
By the way, just an opinion, a blood parrot is not South American, it is a line bred mutant creation with some South or Central American ancestry, probably made in Asia. If you were going for a true South American biotope, and trying to be geographically correct, it doesn't belong there.
