before i've been using the same stress coat+ that had always said "removes chlorines, chloramines, and ammonia." Then when i went back to petco to grab another bottle about 2 months ago, it looks like a newer stress coat+ bottle...and it only says "removes chlorines, and choloramines" now. Was just gonna switch to Prime, but did not want to use something new to me. i used stress coat for 4+years.

So the question is, should i start doing more water checks incase of ammonia?

All my fish still been healthy even though i started using this *new* bottle with no ammonia removal. here's pics of the older/newer bottle i am talking about

THE ONE I USED BEFORE..

That's right. The only way it could have been removing ammonia was while the stuff was being used to carry out partial water changes.

like any other chloramine treatment they need to have enough chemicals to convert the ammonia from the chloramines to ammonium. They are not meant to treat a cycling tank with excess ammonia though.

Water changes are intended to keep nitrates down. High concentrations of nitrates lead to bad water quality which lead to fish getting sick or disease. Water conditioners are used when performing water changes. What it exactly does is neutralize ammonia and nitrites in your tap water which lets your biological filter turn into nitrates. I only use prime when I do water changes and no other chemicals.
