Newbe at snakeheads

Hi I have never had these before but would love to try.
I have a spare 48" x 18"H and 18" wide.

what snake heads can I keep in there, I would like to have at least 2 in there.

I am guessing the golden cobra snakehead is to large to have a pair in that size tank?
 
Yep.

Go bleheri, andrao, gachua, you have tems of small awesome species
 
Thanks would a pair of pulchar be ok in that size?
also I read a little saying that they like mature water with small water changes,

The thing about water, they dont like variation in water parameters. If there's a variation, they get skittish and try to jump out. IMO (might be wrong there) mature water is not the actual concern. I keep WC to a minimum and, to be honest, didn't cycle the tank while adding the Channa in the tank. He's couloured up well and well now.. :) Make sure you have a good hardscape for whichever channa you're planning. Bleheri (less aggressive), I would suggest for a start. They're really colourful and you wouldn't get bored easily with them. Check the channa profiles sticky thread as the above comment reads.

Bleheri is the species that I will be looking to keep as I heard this was a good start with snakeheads, Gachua are supposed to be a good first species to have also. A couple in a well planted 5ft tank should be ok from what i've read/seen? Is a sump a good option for a snakehead tank to minimise disturbance in the main tank?

The difference between Bleheri and a Gachua is that the Bleheri is a little docile; amongst themselves and with their owner too :D Even though they pair up/yet to pair up, you can have a group of Bleheri for a pretty long time. They are a little easy going and colour up all year, no matter what. I've had a Channa Gachua from Meghalaya, India, that colours up only when water temp is less than 23-24 Deg.C.

Filtration? I wouldn't bother much with filtration in a Channa tank. :) Also, they need stable water parameters, and hence, less water changes, which your plants may not "like" unless they're hardy ones like Anubias or Ferns.
