I'm going to be getting a huge tank, over 300 gallons soon for my beardies, but for fish, what would be a good general size for monster(s)? I don't have any in mind yet, but maybe a small school of oscars, etc. I think I may be looking around 250 gallons or so?

I dont think theres a general size, is there? Just go for the biggest you can afford/accomodate and filter because we always end up getting bigger tanks for bigger fish lol.
