I have a 60gal tank. Just got my own api masterkit freshwater. Everything checked out good besides nitrites are high like 5.0 i just did a water change last night about 30/40%. Tanks been up for 3 weeks running with fish no concerns with the fish activity, obviously i know nitrites this high is no good but i wouldnt have guessed anything was wrong.

Maybe do like a 30 percent water change 3 every other day for six days

Someone said i should remove the carbon filter and switch it with something else bc the carbon filter removes stuff from the water thats good for fish health? Whats a “bio media” that i could use

Nitrite means your filter is not doing it's thing. Either not mature yet or you killed it by cleaning the bio media.
