I know they have a trio of spines on their backs, but I also know catfish seem to be able to eat anything. Input? Anybody done it?

It should be fine. Sticklebacks are one of important forage fish for bullheads in some "bullhead" lakes. When I had bullheads and walleyes, a local bait store selling these sticklebacks for cheap so I brought them as feeders and I have no issues with it so far.
