my ornate bichir is about a foot long. How big is it going to get. Will it be okay in my 120 gallon? Does it eat when i'm not looking. It must because it is still doing well. It seems to be doing well with my aggressive american cichlids. Does anyone foresee problems?

120gal will be fine, I used to have one in a 60gal with a few Africans. He got about 15-16" long.
One day I rearranged the rocks to curb the aggression of the Africans. Seems he did not like this too much, because he committed suicide overnight. Found the cat licking him on the carpet in the morning.

and it will take quite some time for them to grow to their full potential.

u shld be fine

yea find ornates to be very slow growers along side my sen. my ornates probably around 8-9 inches. so yours should be fine.

I've seen a 20"+ ornate living in a 40 gallon. So 75? I'd say yes it could live in there forever, how comfortable it would be is a different story. Although...they aren't that active either.
