Oscar looking pale

I have 2 red oscars that are about 7-8" in length and when I purchased them around 1" they both had beautiful red colors and a deep black face, but as they grew one kept its colors while the other turned a dirty gold does anyone know why this may be happening?
 
Possibly genetics...

But to ask all the questions:

How is the water quality?
How often are water changes made?
What size is the tank?
What type of food/foods are you feeding?
 
I understand the water quality is my problem but I don't understand why one is beautiful and the other looks just as big/ healthy but the color is terrible.

1. Bad(id feel worse saying that if i wasn't away at school for months at a time playing football)

My filtration is good also but becomes overwhelmed over time I have an ac110 2x 325powerheads with prefilters and an eheim 2215 I may have to construct a sump for it when I go home for winter recess.
