you can't really, at least I can't. sometimes you can tell because of their behaviour during mating, but, the best way is to disect them.
If it has eggs tumbling out of it, it's female, and that's sure-fire. Other than that you cannot tell from looking at them.
And even then, you get female/female pairs and male/male pairs, so if you happen to get a compatible pair, just try and stop them from breeding, but most people aren't that lucky anyway.
