Alright total newb in this area. But whats the difference between an overflow and a plain old siphon? why use one over the other?

if you lose power, a siphon will empty your tank, an overflow will stop. when power goes back on, an overflow will restart no problem, a siphon will not.

Ah plain and simple I guess thank you. Is this the part about not draining your tank only for surface drawing overflows or can this be applied to ones that draw from the bottom/middle region too? I'll need a small hole for a siphon break for that wont I?

Really depends, if you make a DIY PVC overflow that pulls from the bottom the water level is set by the outlet hight and no siphon break is needed.
