I do my weekly water changes, and also vacuum the gravel weekly as well, is that good or bad.

Good. How big is your tank and what is your stock? Lets see some pics.

I do wc's 3x a week of 50-70% because I have so many large fish. So your wc's depend on your bio-load.

Once a week is good depending on the size of the water change and your current stock. Gravel vac is always good as you're removing any waste that will foul your water.
