I know I'll be using white paint lol, My question is do i want a gloss or latex or flat, interior or exterior?

Go with a latex gloss white trim paint. Don't use kitchen and bath paint because it contains chemicals to inhibit mildew.
I'm betting he already painted it by now, bud.
Full gloss exterior IMO. Less prone to grow stuff and easier to clean.
Mildew inhibitors shouldn't hurt your fish unless you plan on filling the canopy with water and letting them swim around in it.

I actually painted it a oil based enamel. The guy at sherwin williams said it was the best to go with as he uses it in his canopys at home 
. I was gonna go with tileclad 2 but he said he wouldnt sell it to me as its some nasty stuff.
