Patterns - juvenile to adult

I've seen a bunch of comments about spiny eels being mislabeled when they are small in the stores.

If you can pick out a specimen in a store with nice or unusual patterning, how much would it change as they got older?
Say M. Dayi, M. Favus, M. Armatus, M. erythrotaenia.

What's your experience and if you have "then" and "now" pics to illustrate it I'd love it.
