[Petsmart] Jack Dempseys

So today at Petsmart I saw two 4inch jack dempseys in their own tank with free floating fry, couple weeks max. One was definitely male and beat up, while the other lacked any spangles on the body, so I assume it was a female. (This one was very dark black with the white stripes on the top half of its body, but when I returned after one loop around the store, it was a very faded tan color)
Wasn't able to get pictures.

Is it common for Dempseys to mate in circumstances like this? And is massive color change normal in a stressful environment?
 
When i wworked for petsmart it was very difficult from keeping the cichlids from pairing annd breeding.

My JDs take turns guarding the fry. They change in and out of breeding color depending on whether or not they are protecting their young. The change is very quick.

My male JD Changes colors depending on the lighting in my room, if it's darker he canges to darker less colorful display, when the lights are on he lightens up a bit and shows off his colors.

Bought my JD at petsmart, he struggled with ich which he had gotten at petsmart. He's good now though, very hardy fish.
