does it really matter?

what happens if a fish gets put into a tank outside their PH range?

reason. i am wanting to mix some fish that are mostly 6.0~8.0 and I thought 7.5 would do it but then the sailfin pleco is 6.5~7.4. and the needlenose gar is also 7.4
will they survive in a 7.5PH tank or am I better off lowering it to 7.0 so mostly all fish would be pretty happy?
 
pH is important if you are changing dramatically over a very short period, or if you are beyond livable conditions. You cannot put a fish in water with a pH of 4, or 10.
 
would a difference of 0.1~1.0 matter?

and this might get off-topic but i'm thinking of buying this tank that come with tropical fish but on the ride home, wouldn't the temperature of the travel tub decrease?
and once I fill it up with tap water it's gonna be pretty cold, will the fish be able to withstand it?
