any recommendations for central or South American tank? 120g 2ft wide 4ft long, fx6 filter.

Would be a nice tank for a pair of most species. If you want a community I would stick with more tolerant/smaller species. What is your water like? South and central American cichlids tend to like different conditions.

I only know what the test kit shows, my waters PH is 7.5 of course no ammonia or nitrites.

hardness? 7.5 is pretty neutral pH, but soft water fish from south America don't do well with long term exposure to hard water, often develop HLLE, pitting in face. And centrals like yours do better is water which is harder with more dissolved mineral content.
For centrals, I might do a pair of your favorite 12" max fish. Amphilophus lyonsi would be a good choice. A divider on hand would be smart for a breeding pair of large cichlids in a 4' tank.
For a community, I would look for smaller fish like panamensis, hericthys tamasopoensis, centrarchus, amatitlania species. Or, a large group of thoricthys would be nice.
If your water is soft, whole different set of options
