So, this is the second time this has happened.

I saw this pink "goop" floating in the tank. I don't know what it is, and I'm concerned about it. Especially since this time, my Lungfish was passed out to the point that the filter had drawn him into the corner. I poked him and he woke up, but still, it was scary =(

His normal diet is frozen brine shrimp, and occasionally some tuna fish. I just replaced the filter media and cycled the water, so, I'm not sure what's going on.

Any ideas? How concerned should I be/what actions can I take to make him feel better?

You should do a bit of research on the nutritional requirements of this fish, as this diet isn't close to adequate. That unappetizing glob looks like a regurgitated or perhaps never-eaten piece of food.

And you don't cycle water and change filter media...you cycle the filter media and change the water. :)

FahakaPapa: The tank is only a couple years old. I called it "cycling the water" because I wasn't thinking straight. I changed all the filter media (ceramic and ...blue spongey stuff, I forget what it's called)

Jjohnwm: Funny thing is, I SAW him eat it... so I guess he had to have spit it back out? I'll double check on his dietary needs. And thanks for the correction!

He probably saw you change ALL the filter media and spat it back out, I did that with my tea when I read it!
Don’t change all the filter media. Just wash different bits of it each week in tank water ( but not in the tank!) . That way you will keep the good bacteria active in the filter all the time. Do this each week at the same time you do a water change.

Okay, so, update:

I watched him eat just now. He eagerly ate the food I put in, but looked like he was having a really hard time getting food down, and some of it was starting to exit out through his gills. Is it possible he has some kind of obstruction? Maybe he swallowed a stone?!

If that's the case, any ideas what I can do for him?

Remove your current substrate, do a water change to remove the dirty water caused by removing the substrate. l and then wait for him to pass out the stone if he did swallow one.
