I have a tank with sand as a substrate and I am considering adding live plants to it. What plants what do well planted in sand, if any, and which ones should I stay away from?
In general, sand is a great substrate for all rooted plants. IMO the best. You need some substrate fertilizer, though, if you do not have playsand (which still contains some clay). Depending on what fish you keep, they will more easily uproot plants from sand than from gravel, which you should take into account.
Yeah, sand works very well to most plants (of course not Anubia, Microsorum). Some people says that you'll get a problem with gas in the sand, but I have never had a problem with that. Besides, you can also use sandsnails.
