I have a 10g with a single J. Transcriptus and sand substr. I have plenty of 6k light and was wondering what good slow growing hearty plants that could take those water parameters would be? Plenty of filtration and about 80 degrees.

I'd try some Cryptocoryne, Echinodorus tenellus, and some Hygrophyla. If you want stem plants you could try some of the various Rotala.
I wouldnt suggest BIG growing plants in that 10g.
Here are a few
Anubias Nana petite (or just nana)
Java fern (it will grow and you will have to maintain it)
Some vals would be fine as well. Keep the shoots from spreading to much by clipping the root stem.
