With the RO/DI units, it says it makes 50 or 75 gpd. Once it does like lets say 30, can you shut it off that way you dont have like hundreds of gallons of RO water sitting around even though you only put in like 15 every week? And about buying the RO water, if you put in like 10 gallons every week, do you have to buy 10 gallons every week? Or can you buy like 20 and then you dont have to go every week to the pet store?
 
probably, shut off the power/unplug (dont' know how they run) if it doesn't
 
you can certainly shut the unit off when you make enough water. and you can buy as much as you need at the LFS, it won't go bad.

Yes, you can shut it off, as long as you dont allow the RO unit to drain, as once the membranes go dry, they useless..

Yes, you can buy your RO in bulk, use as and when required. Just keep it in a closed container to stop contaminants entering the RO storage...
 
Once you have the required ammount of RO water, simply open the "Flush" valve for a few minutes to clean the membranes. Then you can issolate the unit from the mains supply.
