tank is 6'x2'x2' and house the following:
1x14" achara catfish
1x12" clown knife
1x16" FL gar
1x6" JD
1x4" Jaguar cichlid
1x10" ornate bichir.

light is 4' long and specs are in the picture. are there any plants out there i could keep alive and healthy preferably with me doing as little work as possible? will my fish work with plants? any plant recommendations would be great.

Java fern, anubias, and Amazon swords are great, hardy starter plants that should be fine. They don't require trimming, high light, or co2. The anubias do benefit from an iron rich fertilizer but it's not necessary. The leaves aren't fragile and they can be tied to decorations like rocks or wood to stop fish from 'redecorating' with them. Plus they are all relatively cheap and sold at most lfs.

Chiclids love to tear up new plants I've failed with terrors, black belts, uarus, jd, severums, texas and flower horn. The only think I can imagine you trying is anubias. But that's probably still a losing bet.

If you're planning for the plants to be established, then now is not really recommended, if you want them to root up against most of your plant uprooting stocks you need atleast to let the plants establish their roots and grow some girth first before you introduce your stock,. << this is not a fail proof method, it just boost up your plants survival-ability and give them girth to withstand bumps or any uprooting activity your stock will do...

I can vouch for Water lettuce. Surface plant, it puts up with A LOT of surface agitation, grows very well under Finnex Ray-2's, and my fish don't mess with it....much. I don't know if it just outgrows the fish damage, or if the fish aren't really damaging when they pick other foods out of it. Hard to say. But I've had it about 2 months, and I throw the stuff away. I can also advise STRONGLY against "hornwort". It grows, it looks real green and all, but it's a total mess. clogs up filter screens, gets sucked up into circulation pumps, etc.
