Please tell me about my fish

I have had this fish for about 3 yrs. I wanna say it is a "she". My male jack dempsey and "her" are in love and every other week it seems they start their "love dance" and then finishes with "her" moving rocks and digging a huge ditch which she defends aggressively. During this window of time she turns a brillant neon orange color for a few days and then gradually changes back to a light orange with a dark orange mask across her eyes . ( as seen in pic posted) To my knowledge no eggs have ever been spawned.
My question is what kind of hybrid fish is she????? or is she a mutation or something????

hmmm...would it change your mind if I told you that she is approx. 8 inches!!!
I mean do the parrots grow this big???? I am wandering what species mom and dad were?
 
wow thats pretty big i have mine for only 2 years and she about 7 inches from head to fin and yes they do get pretty big and i used to work at an aquarium and i seen one at work about 10 inches from head to fin ( it was a male ) and I THINK its a sevrum and a red devil i think i dont really remember but someone told me it was a sevrum and a red devil.

I agree, that is a king kong parrot. They are usually bright red or orange but your is unique. See my BP below, he can't close his mouth, he's a regular BP.
