I have a 120gal upgrade, running 2 Fluval 304 filters in a Low tech planted tank. My 15" pleco is digging as he never did in the small tank, but the issue is amonia. Is 2 Fluval 304 filters insufficient to the task?

IMO yes. Upgrade your gear to either a large canister (eheim 2260/62 or fx5) or start getting a sump together. 304's are pretty weak

Fluval 304's are rated by the manufacturer at 260gph. My experience is that canisters are closer to half that filled with media. So basically you're at around 2-2 1/2 turnover an hour. IMO this is low even for a lightly stocked tank. I keep several 5" plecos in both my 90 and my 300 and I usually shoot for between 7-10 turns and hour. If it were me, I'd get at least and fx5 for your situation( or possibly a future sump) Even small plecs are poop machines, so your gonna need some help with your big boy. Good luck
