Poly's for a 75g?

Any upper jaws except weeksii, teugelsi, and ornate. Also try and stay away from lower jaws as all of them reach large sizes.
 
Prolly keep 3-4 not big upperjaws in a 75, assuming lots of hiding places
 
I'd say 6-8 would be about as high as you would want to go provided you have adequate filtration, but would recommend 4-6.
 
What dimensions? If standard, I would say no more than 5. They can be messy.

That said, delhezi are a great option. If you plan on getting a larger tank then just get whatever suits you. They are all beautiful! A 75 will be suitable for small specimens of any kind, and it will be a while before most species (if purchased young) will outgrow it. Plan on an upgrade in my opinion--big tanks are more interesting to watch, allow for more interesting scapes, and, of course--hold the biggest and most awe inspiring polypterids.
 
Sens, Delz, and Polli would be fine. That's my current stock in my 75g. A Ropefish would be good as well. Make sure you cover all gaps on your top.
