My wife and I are scratch cooks. We don't really have any 'best' recipe. We have some favs from our 1000+ recipe repertoire. Here's what I made for dinner yesterday:

Savory Ribs & Rice

Ingredients:

2 to 2 1/2lbs country-style pork ribs
2 tablespoons olive oil
1 small sliced (julienned) green pepper
1 can (16oz) crushed tomatoes or tomatoe puree
1/2 small sliced yellow onion (or 1/4 red onion)
2 cups chicken broth
Salt & pepper to taste
A few shakes of Italian seasonings
1-2 large cloves garlic finely diced or crushed
1 cup of white rice (not instant)

1. Separate ribs and cut to serving size.
2. Trim as much fat from rib pieces as possible.
3. Braise the ribs under the broiler or brown the ribs in the olive oil in a frying pan. If frying, first, take a large frying pan, add the oil, and allow the oil to get hot. Then, add the ribs and cook over a medium heat until they are browned on all sides. Once browned, reduce the heat and cover the pan. Simmer the ribs for about 30 minutes, stirring about every 10 minutes. Remove the ribs from the pan and set aside on a platter. Keep them warm (placing the platter in the microwave will help them hold the heat.
4. Pour most of the pan drippings off. Just leave a thin coating in the pan.
5. Add the sliced pepper, onion, and garlic to the pan. Saute the mixture over a medium heat until blanched.
6. Add the chicken broth and tomatoes to the pan. Bring the mixture to a boil. Stir in the rice, italian seasoning, and salt & pepper.
7. Now, place the ribs that were set aside over the top of the pan mixture. Sprinkle again with salt & pepper, cover the pan, and simmer for 50-60minutes, or, rice and ribs are cooked all the way through.
