I plan on breeding some fish soon (marbled crayfish...I know not a fish per se) and want to know the proper way to cull fish.

By proper I basically mean most humane. I've bred Convicts and Blue Acaras before and some died or I gave them away. Didn't have to cull and fish just because it looked a bit different.

Freeze them? Clove oil?

The least painful way. A bullet to the head would be better than no water while being in the desert for 10 days.

Depends on the size. For small fish blunt force trauma. I usually put in a bag, and swing against a wall hard. They die instantly. I know other people who put them in a food processor.

For large fish I find a sharp spike to the brain is quickest, as some one who does a lot of fishing I know how to do this properly and fast.

Quickest is best.
OP, be prepared for strong words with this taboo subject. I have found that giving them away is always the best way.
As far as crayfish go, if they are small, they can be feeders to larger fish...

For crawdads I think giving them to friends that have big fish that eat them is best.
If it is small enough I put in garbage disposal. I know it sounds disgusting but is quick. Big fish I will put in a cooler of ice water with a whole bag of ice. Medium I put in a Tupperware of tank water and put in the freezer.
