Protein skimmer question

What determines the size of the skimmer?
I have a 5 gallon water jug I want to make into a skimmer how do I know if I need one or two?
Does all the water have to go thru the skimmer first then into my sump or should I do some into skimmer some into sump my plan is to have the water go from tank to skimmer to sump to be heated and recirculated into main tank (200 gallon with 150-200 lbs live rock) tank will be fowlr any way after readying some I plan on having two air pumps feed bubbles into the jug.
My plan is to have water come in top then exit the bottom

All the water doesn't have to go thru the skimmer, it will be better if it did. Some things that determine how affective a skimmer is are the amount of bubbles, contact time with the bubbles and flow rate. I think a 5 gallon jug will be fine. You should go on youtube and see what other people have done.
