Scientists dissect the snake and are able to determine how many heat receptors there are by using a microscope and then they track how sensitive they are to heat by measuring the electrical impulses produced when they are exposed to various temperatures.

I had a similar question and this is what the department head of Herpetology at the University of FL told me.
