Purely raw feeding is okay for monster fish?

Hi, I have 3 peacock bass and 2 Florida gars, but I haven't had any success getting them to eat dry food (I'm still trying different foods and methods, and waiting for some products I ordered online). So, I have to feed them fresh foods like shrimp, beef heart, pangasius fillet, and similar things. How can I make sure they're getting the necessary nutrients and staying healthy with this diet? At the end of the day, I know my fish aren't the first ones to refuse dry food, so I wanted to get some advice from you. My goal isn't to overfeed them with fresh meat to make them grow quickly, but just to ensure they're healthy. Please give kind answers.
 
I live feed some of my fish, datnoids and pike cichlid. I think it is good for them, but you have to be careful.

I feed with ghost shrimp, but it is high in Thaiminase, so I also feed river fish fry. Tilapia is good, as it is low in Thiaminase. I treat live feeders for parasites with levamisole for twenty four hours before feeding.

If your fish will accept chunks of tilapia, you are doing well.

No need for fillets, that is not balanced, use the whole fish, cut into pieces.

Do not feed beef heart. No fish would naturally eat that.
 
First of all, thanks for the information. Honestly, I don't know exactly what type of shrimp I'm using. I buy them frozen and cleaned from the supermarket. I've read about the Thiaminase issue in a few forum posts, but I'm not sure what precautions to take. It might sound strange, but it's hard to find tilapia in my country. The closest freshwater fish to it are pangasius and sunfish. I regularly feed them pangasius fillet, but I could try sunfish since it's another option I have access to.

Regarding beef heart, the feeding habits of my fish vary a lot because I got them from different people. For example, one of my peacock basses never eats shrimp. I tried feeding it only shrimp for a week to get it used to it, but it chose not to eat at all, even if it meant starving. So, for now, I don't have any other choice but to use beef heart.

What routine do you follow when feeding your fish? Mine are currently about 20-25 cm long, and I feed them pangasius fillet and shrimp once a day, five days a week, and beef heart one day a week. Do you think this is correct?
