Questions about native fish.

I am wanting to set up a Native tank in a few months, I have always kept C/A S/A cichlids and have a few questions about Native fish. How hard is it to pellet train crappie, warmouth and largemouth? Also I can get my fish from a local fish hatchery or from the wild , it seems the hatchery would make a easier transition to a aquarium than a wild caught one. I want a natural looking set up and I dont want many fish in it , I really would like to use cypress knees and other cypress pieces , anyone have experience with cypress? And the reason pellet training is very important is that I work 7 days in the Gulf of Mexico and home 7 days . I have someone feed my fish while I am at work and I dont want to ask more than dropping pellets in the tank for me. Any advice on this would really help, I want to do this right.

I forgot to add that the tank will be a 300 I was going to do a 125 but want it to be bigger for more natural pieces and space for the fish to swim. The reason I am waiting a few months is because I am moving in May and I dont want to have to tear it down and set it up again, I already have 3 tanks to move lol

you forgot the media...
I've had a cypress knee in my SA tank for years.
from what I've read crappie are near impossible to pellet train, but there have been some successes.
lmb are difficult, but doable.
warmouth are the easiest of the three, but can be stubborn.
 
Oops I did not think about the media section , I must have posted in the wrong area. In glad to hear that cypress is ok for a aquarium , there is tons of it around here and it is my favorite looking wood. Do you think getting the crappie as fry and growing them out would help with the pellet training?
