I come from a reptile background and calcium defeciancy is a real proplem. If i switch my fish to strict fish fillet / market shrimp diet, WILL I BE depriving them from certain nutritient they can only aquire from eating an entire fish / some sort of vitamin based pellet.

Basically im asking if People have success and no issues with feeding only the meat of the fish / invert for the cats entire life
 
Possibly, but this is where gut-loading closes the gap. But you've got to use good gut-load food, not corn and wheat-based junk food like Hikari, Tetra and Wardley.

But what catfish are you considering? Most will readily eat anything any time. So you could do pellet one day and live the next and so forth without trouble.

In my opinion, prepared foods offer some essential nutrients that captive fish wouldn't get enough of with their restricted diet. But live foods also provide raw neural tissue and omegas in their raw forms which prepared foods typically do not. So I use both.
