i just picked up some Hikari bloodworms thinking they were in cube form, but opening them up i realized they were in 2 sheets. How much should i break off to feed?

Depends how many fish you are feeding. Break into little chunks and feed until they won't accept food anymore. Keep track of how much you add, and next time you'll know.
ill stick with the bloodworms for about a month, hopefully the big one will go back to eating those for now.. maybe go between both see how it works.
