With a 6ft 125 gallon, I’m curious what the largest Cichlid pair I could put in there permanently?

Oscar is the first thought that comes to mind. Not sure if it’s large enough to do an amph pair without aggression.
 
I would say most cichlids that max out around 12" would be fine, though you may have to divide some of the rougher species. I wouldn't try the bigger tankbusters like dovii, umbee.
I agree with this, an adult pair of 12" cichlids about all that size tank is equip tp handle.
And for some of the more naturally aggressive types, it might be too small for 10" species.
 
Smaller parachromis
Oscars for a few years
Chocolate cichlid
Amphs
Some vieja or related species
Beani
Gt
Festae for a few years
Texas
These come to mind.
You may want to keep a divider handy just in case.
If not a show tank. Install a divider with holes big enough just for the female to pass through.

Plenty of cool options. Piranhas come to mind first (my favorite).
Also good is a mix of cichlids: chocolate, severum, festivum. Or angels or discus.
Lots of the small guys like tetras and cories too.
Silver dollars are a good fish as well.
And leporinus, cats, and oscars.

Edit: forgot which thread I was on. Still cool options for a 125 but not what you were looking for.
