I think swimming pool plaster might be a better choice. I'm no brick mason, but SP Plaster goes on smooth and probably has a better possibility of being inert. I dont know the mixture, but believe one ingredient is White Portland Cement.

Crystalline silica is the only thing that pops up for hardscapes. It says it hasn't been shown to affect animals, but who knows

Yes but it must cure and leach out the ph. You'll need to soak it for a few days drain and refill. Test ph before wc when it starts to be normal again 3-4 months you can start using it. I've used it for a reef tank.
