Raising spotted gar

I’d like to grow out a pair of spotted gar in a tank before releasing them into a pond (I live in the uk) . Any tips on water temperature.

I’d keep the temps around 80degrees. Once ur ready to release into the pond then slowly start lower the temps closer toward the pond temps. I assume it’s colder there unless ur heating the pond.

in the winter it gets to about -5 Celsius but I plan to put them in during the summer

If you'd like to grow them quickly, then I agree with what kno4te said. In my experience they will still grow fairly quickly at room temperature (68-72F), especially if you feed them live foods.
