I understand that this is a somewhat split argument, but I was hoping to get some insight. I fed them a shrimp with the shell on today and they ate about half of it (probably the slowest I've ever seen them eat). Then I de-shelled the rest of the shrimp and they didn't touch it. Any thoughts?

They are about 4 inches. Still babies. After trying to bite through the shell directly, they ate it from the solid meat side and gradually went up to the tail . Thats why I felt compelled to ask.

4"? Not exactly babies lol, teen size is 4-6"!

You prlly mean 2-3", I used to over estimate the size of mine, then I put a ruler on the tank for a few weeks to gauge sizes! When they get bigger they will inhale the shell and meat, Atleast that's what mine do! Try a good pellet to, they provide many nutrients!

If I throw shrimp with the shells or tails on, my cariba dont really mess with it or they leave the tails floating. So I thaw the shrimp, pull the tails, toss them in first and they eat it readily, then toss in the meaty part of the shrimp.

Sidenote: Shrimp is also the perfect opportunity to stuff other food in. Hide pellets, carrots, etc in there and most the time they'll eat the whole bit.

Yeah I feed everything. I just thaw them and throw them in directly. They usually eat everything but a piece of shell is usually left over. I feed deshelled shrimp only after the shelled ones were eaten. But mike that is an excellent idea. I'm going to stuff it with some carrots.
