Over christmas break (two weeks) i left my 20 gallon full of water but did not have the filters running, when i checked on it the tank was still at 75'. Is the tank still established or will i ahve to cycle it again? its been running for a week now just filters and heater going.

I would say no for your filters because no ammonia is keeping the bacterias alive. However, if you have some type of substrate, there are some in your tank that's sticking to the substrate. The best way to know is with a test of the water. :) That's my opinion

I have gravel in the bottom of the ol girl, because its still submerged that should be fine correct?

No. The bacteria had nothing to feed on while it was sitting idle. You will need to cycle it again. Leaving the filter and heater running with no source of ammonia is a waste of time.

On the other hand, there very well could have been fish poop/leftover food or dead fish bits down in your gravel that would have decayed and produced ammonia to keep the bacteria alive.

Only 1 way to know for sure.
