I noticed that one of my Oscars (which I thought was Male) seems to have a belly full of eggs. What do you all think? Another strange thing is that, she seems more interested in being with my Jag than with the other Oscar.

I can see her breeding tube. She is full of eggs.

Ya her tube is descending so she will likely drop eggs soon. Maybe your other Oscar is female too and she is pairing with the only male she can. I don't think they can cross breed but I could be mistaken I'm
far from an expert on hybrids.:)

The other O might be a feamle. She is ready to breed but the eggs wouln't be viable.
 
Nah chances that an oscar and a jag can breed together is low. Don't think any tried, but really they're not even in the same subfamily. Oscars belong to the Astronotinae subfamily whilst jags belong to the Cichlasomatinae subfamily. Then again it's obvious that species from the Heroini tribe can crossbreed rather readily, and that's just two levels down so who knows.
 
She will most likely try with any mAle available. Especially if they are that gravid. Or she might just lay the eggs alone. Ive had my oscar male trying to pair up with a midas female, she laid like 300 eggs and all pointless. :)
