In the next month or so, I would like to add a bichir or two to my 75g. Tank mates would be a Gold Saum, as many as 4 blue acaras and 7 Buenos Aires tetras. I was thinking a Senegal or maybe even a regular/albino Senegal combo. Unfortunately, they're kinda bland. What other species could be an option? I'm having a hard time getting actual max sizes because most of the time people just quote the max recorded size and IRL they just don't get that big.

I suggest the Senegal. They actually have a Senegal specie from Lake Turkana and it reaches a foot or more. Others will chime in with thoughts.

Delhezi are a more interesting looking alternative to the senegal that will be suitable for a 75. They rarely get past 12-13" unless wild caught, which you wouldn't get unless looking for one specifically. So if you're willing to spend a little more they're definitely worth it! On a side note, sens are probably the most active bichir species out there. Depends on what you're looking for :D

I definitely like the look of the Delhezi more. I hadn't even considered the activity level. Hmmm.?

My young del is a long shot from the glass surfing sens of before. At London zoo their dels didn't move much in a few hours, again depends on what you want out of the fish.

My dels 4 all together are pretty active. Not active all the time but are active. The one in grow out is just a little baby atm but still active and will eat from my hand. The del will probably eat your tetras though. Mine ate full grown giant danios when they reached 8" mark a little over a year. If they couldn't get the whole thing down they ate the soft bits. They also ate my black skirt tetras but they kept 1 as a mascot I think....lol. Remember they are predators all bichirs are. I also think a 75 is on the small side for a del. My female (I don't know the sex of the baby yet) is WC and about 14 inches maybe a bit bigger.
