At what size do these guys start getting their color?

depends, 4-5 inches starts in tail.... The better water quality the better the color. This is more so true with these guys than others...

Mine is maybe 3" right now and doesn't really have much color. I guess it could be a girl. I got him from a reputable LFS and I asked if he was able to tell male from female and he said he could sooo.. My water quality is great so that shouldn't be an issue.

Is he the dominate fish?

These guys tend to be some of the slowest haps to color up... But as said 3-4 inches you should at least be able to tell if it is male.

When in the right light it has an irridescent blue color to it....Is that the start????

Could be a female, but give it some more time(size).
