How do you tell if its a male or female?

Usually the easiest way to sex a Severum is by checking for the spangling/squiggly lines in the cheek and gill plate.

Lines- male
No lines- female

A lot of times this isnt very evident until the fish has grown up a bit (4 to 5 inches).

Its called worming.
