Redtail Catfish food

They’re garbage trucks, they should eat just about anything you throw at them as long as it’s edible.
 
would that be better for them though?
Pellets are made with the fish’s nutrition in mind, if you feed a variety of them then you’ll get all the nutrients they need.
 
Depends on their size. When small, good quality pellets (at least $5 per pound) would be fine. After they reach 1'-2', it will become way too expensive, so frozen fortified with VitaChem is more sensible.

I'd not recommend cheap pellets at any size.

I use hikari for all my fish is that good?

Should be one of the best, if used according to the fish type - carnivore, omnivore, or herbivore.

It will get expensive sooner than later, so if there nothing preventing you from offering frozen-thawed, I see only pluses.
