I am going to upgrade my 125g to a 210g. I am thinking that while the 125g is dry, I will reseal it. It isn't leaking, but a couple strips of the silicone have bubbles and it is receding in places. Tank is pretty old, I have had it for almost 5 years and I bought it used.

Question though, I heard from a LFS that when you reseal a tank, when you break that original seal, the reseal never lasts as long - maybe 4-5 years at best. Is that true?

Are you talking about a complete tear down of the tank or just replacing the inner seals? If you are doing a complete tear down and do it right it will last indefinably. If you are just doing the inner seams it depends on how you do it. For the structural seams you should just RTV 108 clear or RTV 103 black because it is an adhesive and will bond. For the inner seams you can use GE1 or similar 100% silicone, make sure it has no anti mold stuff cause it will leech crap.

I am talking about doing the inner seals - the "right" way. I found a couple threads on this site that were very informative, but none of them mentioned the "life" I would get out of a re-inner-sealed tank... so, assuming that I do it correctly, just the inner seals - how long could I expect it to last?

It will last for more than 5 years. I have resealed tanks and they never leaked.

Ya, if you do it correctly it should last just as long as any good "original" seal. But getting all the old silicone outta there is a PAIN! I'd be sure you were really wanting to spend the time on it before I started, especially if there are currently no leak issues as is.
