My Flowerhorn died, and I'm thinking about redoing the 75 gallon tank into a severum tank. Never had severums before. So I'm hoping I can get some tips about how many I can put in there, tankmates, how hardy they are, etc.

I would go with a pair. I can tell you that they are incredibly boring and inactive. I've had my severum pair for 2 years. In that time they've grown from 1 and a half inches to almost 10 inches. I feed them twice daily. They are gorgeous looking fish but have to be the most boring fish I've ever had in my life.
