Got a 250g, the depth (front to back) is 26 inches. Is it better to put the rockwork flush against the back glass or is there an advantage / disadvantage if i put the rock work in the middle ?

It may or may not depend on the species of fish you will be keeping in this tank and the shape of rock you will be using.

I usually place the lower rocks an inch or two away from the rear glass and stack the remainder with some pieces touching the glass depending on the rock shapes.

There is no right or wrong. I like to stack in the middle to allow territories around the entire rock pile, both front and back. Also makes maintenance easier...no rocks in the way of the scraper on the glass or blocking vacuuming with the Python around the whole rock pile.

It seems like mbuna, will not swim any higher than the tallest rock. Then peacocks like the spot just suspended over a rock.
Sometimes every fish will hide behind the rocks. In my case plastic sheeting cut into rock shapes.
I like to break up the tank into thirds, with well defined borderline between rock formations. Line of sight breaks, and escape routes from dead end box canyons.
A centered rock ridge will allow more escape routes, than a pile of rock against the back glass.
Then theirs Texas holey rock, which allows just about any formation.
