yes ropes can

Yepers They should be treated as any other bichir. as for max size idk iv seen websites listing and where from 12 to 36 inches in lenth

Max size in captivity is more likely 14-18+" but may take many years to get to 18"+. Even getting them to 13-14" takes 2-4 years when they are already at 12". Never seen a 36" before but who knows maybe somewhere in it's native habitat. If polypterus palmas buittikoferi was thought to gorw of max of 13" but later they found a wild caught at 20".

Do they escape easily? I have a few at our LFS that are over a foot, (i believe) but I'm scared that they would climb out of my tank.

there like all fish that can jump but can get thru smaller opening too and keep ur lids tight and well covered

Hmm... Thats what I'm scared of. I the whole top is covered, but the back is open a few inches above the tank. it has a canopy, no glass lids. Maybe I will wait. I don't like finding jumpers lol

Trust me, you want a tight fitting lid with no openings! I had a rope that escaped. I didn't realize that it was gone until it was too late. I found it stiff as a board behind my tank.
