I bought a 300 gallon tank that was previously a reef tank. I cleaned the tank, overflow box, all piping And the Sump with vinegar and water. There are a few small deposits left in the overflow box I can’t get but other than that it’s looks good. Any precautions or advice before moving my fish from my 125? I was planning on filling it and letting it run for a few days just to make sure all levels are stable before switching my established equipment over to the new tank with the fish

You will be fine. I've personally converted 2 aquariums from Saltwater to Fresh with a bit of Coralline Algae on objects. Overtime it will loosen and drop off.

give it a good rinse and fill it up just to check for leaks. Then on the day I'd probably drain half the water, move all the water, fish and equipment to the new tank. Nothing is really needed to move from marine to FW other than a rinse.
